From 2010 to 2014, I worked at cake and cookie manufacture at Nizhny Novgorod. Then moved with my family to Moscow. Here I became a pastry cooks. Changing locations and jobs, I was never able to get a professional education.

That is why I don’t call myself a pastry chef, I’m just a pastry chef at my heart and I’m a dreamer! Baking is like magic and music that I can create and compose not from books, not from recipes, but from inspiration. I bake various products: homemade cakes, pastries... I would compare them to an antique vase: they are not modern, as the masters do now, but delicious and created from the heart.

Ingredients

The amount of ingredients is noted for 3 snail pies (dough and cream) that will be needed for the cake.

  • Snail pies
  • Wheat flour 450 g
  • Baking soda 5 g
  • Salt 5 g
  • GRANDPRO TART Margarine 200 g
  • Kefir 230 g
  • Pitted sour cherries (fresh or frozen) 400 g
  • Sugar 60 g

  • Cream
  • GRANDPRO Cream margarine 200 g
  • Condensed milk 200 g

  • Decoration
  • Almond petals 100 g
  • Fresh sour cherries 9 pcs

  • Sift the flour into a bowl; combine with baking soda and salt. Mix, add soft margarine GRANDPRO TART, grind flour and butter into crumbs. Pour in kefir; knead a soft dough. If necessary, you may add a little more flour. Roll out the dough into a layer 3 mm thick. Cut into strips 5 cm wide, 30 cm long.
  • Pit fresh sour cherries or defrost the frozen ones. Put sugar and cherries on the dough strips. Pinch each strip tightly, including the tips.
  • Put all the dough strips in a spiral, starting from the center, in a round mold with a diameter of 20 cm, greased with margarine.
  • Put the mold in a preheated oven. Bake the pie at 180˚С for about half an hour (the exact time depends on the characteristics of the oven). Cook 3 snail pies that way.
  • Assembling the cake. Whip GRANDPRO Cream margarine to a creamy state, adding condensed milk little by little. Grease the pie with cream; put the second and third pies on top of it also greasing them with cream. Put almond petals on the cake; decorate it with sour cherries.
    These snail pies are made with dough containing no eggs, no sugar. They are a slightly sweet only due to the filling (sour cherries with sugar). Additionally, you can sprinkle the cake with powdered sugar (30 g per 3 pies).
